Cod and greens

Tonight my dinner consisted of Cod on a salad od carrots, apple, grapes and juice from half an orange.
Tasted perfectly and fresh!
Calories: 224 Fat: 7% Protein: 33% Carbs: 60%

Homemade lemonade ice (low calorie)

This treat is only for you, if you like something sour! - Which i am a big fan of :)¨

Recipe:



Lemonjuice120 g
Limejuice30 g
water3 dl
Cane sugar50 g
Lime20 g



I heated the water and sugar so they dissolved in each other. Then i let it cool while I squeezed the lemons and the lime into a bowl. Then i cut out one lime into small pieces, removing skin and shell. Then i mixed together the water/sugar with the juice and poured it into six containers, then i divided the lime chunks into the containers and put the lit on. Freeze - and you got yourself some nice, icy fresh ice!


Each ice only contains 43 calories! :)

Italian mushroom salad

Today's dinner was a cold mushroom salad.
Seared the mushrooms in a lot of oliveoil (wups).  Mixed it in a bowl with parsley, garlic, balsamic vingar, lemon juice and salt and pepper. I then put it in the fridge for about an hour, took it out and threw in some red chili pepper and some extra lemon juice - and then dinner was served. Yum..

It's been a long time since I had mushrooms last, since my boyfriend doesn't like them, so I really enjoyed this. Calories = 315 :)

squash salad and other greens

Back from Barcelona. I've enjoyed the heat, the beach, the architecture, the culture and the delicious foods.

I was hungry today - so I made two dishes. A green salad with babymix-salad, avocado and marinated garlic. And then a hot squash dish with garlic and cottage cheese. Both were really great tasting and made me full.

All in all it turned out to be 276 calories.
Not to bad ;)

Summer salad with watermelon and mango

Yet another salad recipe and inspiration.
This time the salad consists of "babymix"-salad, cucumber, asparagus, watermelon and mango. Simple and really "summer-ry" and delicious, with a lot of fruit and different taste varieties.

The big salad cost me 273 calories, and I became real full.
I all ways take a long time eating my salads. I cut the fruits and veggies into quit big chunks, so I have to chew a lot. It gives me a better experience with the food, and besides that it takes me longer to eat.

Simpel

I was out eating kunch with the girls today. YUMMY!
Which ment I wasn't really hungry at dinner time, and that mixed with being late to a birthday party, I ended up eating the most simple dinner ever.
I made a plate with the (perfect!) tomatoes, with salt and balsamic vinegar - and had a boiled egg with that.

I'm aware that this isn't a real meal. But it's a little reminder to myself that things can be simple and still delicious.

It came out at 175 calories :) , and balsamic vinegar with the tomatoes went very well! Ate my dinner in the dun. Perfect.

Cod with mangochutney

Dinner today consisted of Cod with mangochutney.
The Chutney was made out of:

  • Tomatoes
  • Mango
  • Spring onions
  • Dates
  • Lemon juice
With tat i ate some skyr (milk product with lots of protein) mixed with a little mustard, lemon juice, salt and pepper.
The meal ended at 261 calories.

(That glass is filled with a little Fun light peach icetea and sparkle water - It tastes like summer and have 1 calorie ;) ) 

Easy lunch

One of the ways I make sure to keep on track with my healthy lifestyle is by not making things too complicated. You can easily eat delicious, healthy and easy. For lunch I made a little plate I could bring to the couch while doing homework.

It consisted of melon, blueberries and dates.
Tasted delicious and kept me full for surprisingly long.
And there is only 115 calories on that whole plate.

I'm in the process of trying to eat more "black" things. Since they should contain more antioxidants, vitamins, minerals and polyphenols that reduces the odds of cancer - like blueberries, blackberries, black beans, black tea and so forth.

Normally I don't care to much about stuff like that, and try to eat what I want without restricting anything. But I really like berries and beans - so why not give it a shot, and see if my body feels different.

Salad with mango, chicken and asparagus

In this salad there is Lollo Bionda salad, cucumber, green asparagus, a whole mango and shredded chicken.

There is a little over half a kilo here and it ended up being 290 calories :) - I ate it all. Mh,

Big salad with tuna and cottage cheese

I had both sandwich and ice cream for lunch, so needed something light for dinner. I made a salad with romaine, cucumber, red bell pepper, lemon juice, red onion, tuna and cottage cheese :) mhh
The whole thing was only 282 calories

Spinach and feta pie

After a trip to the local steak house for lunch where I got a giant salad bar and baked potato, I wanted something simple at home.
So for dinner I made spinach and feta pie. The bottom is just from some pre-made mix, but it was all right. I ate cottage cheese alongside since i love it, with everything ;).



Pie: 185 g
Cottage cheese: 100 g.

Big green salad with shrimps

Really been enjoying salads. Preferably in big portions and with both greens and fruits.
I eat them both with and without meat, but usually with fish or chicken.

Here is one of my favorites.

It's a big green salad with Romaine salad, cucumber, avocado, kiwi, asparagus orange and shrimps.
I've cut the orange into squares, but I've also used some of its juice as a nice dressing along with some lemon.
The entire portion is about 425 calories. - Which might be a lot for a salad - but it's SO good!
